CUCUMBER, CELERY AND MINT JUICE

Since this has been promised for a long time coming now, I thought to myself why haven’t I posted this yet? I’ve been bedridden for the past two day’s now, and always hate not been able to think clearly and have my normal routine. In all honesty being ill sucks, and really get’s in the way… I’ve had to put my blog on hold whilst I recover and wanted to get this post up and start including more fun foodie posts.

Okay so you might have already guessed this is a quick recipe for one of my favourite drinks at the moment; Cucumber, Celery and Mint Juice! This makes for a great refreshing drink during the warmer months and also comes packed full of essential vitamins, minerals and nutrients to boost energy levels. Energy is something I need at the moment and love making juices when I feel under the weather, especially ones packed full of vitamins to help my body recover…

You will need:

½ Cucumber

1 Celery Stalk

Pinch of Mint

Splash of Qcumber sparkling water (optional) – Can be replaced with an apple or ginger for natural sweetness

(I normally shop through Tesco either online or in store and sometimes Marks and Spencer, so I’ve included links above to the ingredients, and I would highly recommend buying organic ingredients if you can, as it’s so much more beneficial and they’re normally grown without pesticides and nasty chemicals! p.s if you can’t buy organic, then you can always peel the skin from the fruits/vegetables and this also helps reduce pesticide consumption.)

I’ve gone with sparkling water in this recipe for an extra kick, but you can replace this with an apple as a natural sweetener, I do find the Qcumber sparkling water super refreshing and perfect for summer, as it includes extra cucumber and just flows perfectly with this recipe. You’re going to gain a whole bunch of vitamins from this drink including, Vitamins K, C, A, B2, B6 from the Celery and Vitamins K, A, C, B6, B12, from the Cucumber.

Mint also offers so much health benefits including in the aid of digestion, nausea and headaches alongside fatigue and weight loss; making it the perfect remedy for when you are feeling down and need an instant boost. This juice was made for making your skin glow and just making you feel so much more alive with energy and the hydrating minerals from the cucumber just refreshes the skin and gives you a huge moisture boost, making it the perfect excuse if you hate drinking water on its own!

This really is the perfect little tonic for reducing stress and getting much-needed minerals such as manganese, copper, potassium, iron and magnesium, alongside a wide range of phenolic antioxidants. I really enjoy this mixed with crushed ice for added texture or ice cubes if I want more of a chilled drink, it’s definitely a quick and easy recipe to do every day and it’s cost effective, so what are you waiting for?

Will you be trying this recipe? Do you have a favourite Juice you’d like to share?

xo, Jenny
